Prepare the Marinade: In a mixing bowl, combine thick yogurt, ginger-garlic paste, red chili powder, turmeric powder, garam masala, cumin powder, coriander powder, salt, lemon juice, and vegetable oil. Mix everything well.

Add Paneer: Add the paneer cubes to the marinade. Gently coat the paneer with the marinade mixture. Be careful not to break the paneer cubes. If you want extra crispiness, add besan (gram flour) at this stage and mix it in.

Marinate the Paneer: Cover the bowl with plastic wrap or a lid and refrigerate for at least 2 hours, allowing the paneer to absorb the flavors.

Preheat the Grill: Preheat your grill or oven to 200°C (392°F). If you're using a grill, make sure to oil the grates to prevent sticking.

Assemble the Skewers: Thread the marinated paneer cubes onto the soaked wooden skewers. Leave a little space between each piece for even cooking.

Grill the Paneer Tikka: Place the skewers on the grill and cook for about 15-20 minutes, turning occasionally, until the paneer is charred and cooked through. You can also brush the skewers with melted butter or oil while grilling to keep them moist and flavorful.

Serve: Once the paneer tikka is cooked and has a nice char, remove it from the grill. Sprinkle some chaat masala on top for extra flavor, if desired.

Garnish and Serve: Garnish the Paneer Tikka with fresh coriander leaves and lemon wedges. Serve hot with mint chutney and onion rings.
