Soot Feni: The ultimate sweet dish for your Sargi thali

Sargi, a pre-dawn meal holds great importance in this festival.

Right after Navratri, Ashtami, and Dussehra people are ready to celebrate the festival of Karwachauth. This festival is mainly celebrated by married women but is associated with everyone. 

On this day married women observe Nirjala fast (fast without food and water) from sunrise to moonrise for the prosperity and long life of their husband. They start their day by eating Sargi in the morning before sunrise and then drink water only after sighting the moon in the evening. Sargi, a pre-dawn meal holds great importance in this festival. Sargi basically contains dishes and desserts in which the most important sweet dish is Feniya which is basically a vermicelli pudding made from the thin strands of vermicelli or soot feni. 

Here is how you can make Feniya in a very easy way for your sargi. The ingredients are easily available and you can cook it in a very short time.

INGREDIENTS

• 1 pack of soot feni

• ½ liter milk

• 2 tablespoon ghee

• Sugar as per taste 

• Nuts (cashew, raisins, almonds) for garnishing 

• Few strands of saffron (Kesar)

Directions to Cook 

• Soak the saffron strands in two tablespoons of water

•  Keep all the ingredients ready and a non-stick pan to cook.

• Heat the pan, add 2 tablespoons of ghee and then gently crush the vermicelli or soot feni into the pan. Sauté it till it turns light brown. After roasting take out the feni and keep it aside.

• Also roast the nuts for garnishing by adding 1 tablespoon of ghee. Also, keep it aside

• Now boil the milk in a pan and let it simmer for around 15 to 20 minutes till it thickens. Note that the milk should reduce to at least ¾. 

• Add the saffron along with saffron water and sugar as per your taste 

• Now switch off the gas and add the roasted feni into the milk and mix it well in a smooth way.

• Don’t forget to add the roasted nuts to garnish your feniya.

Serve it hot or chilled as you like. One bowl of delicious feniya served with nuts and other dishes won’t let you know about your long day of fast.
