Try these pancakes made with goodness of Sweet Potato

Who doesn't like Pancakes? Pancakes are the most suited options for breakfast and are enjoyed by everyone. Fluffy spongy pancakes can be made with very few ingredients and are very less time consuming. Basically pancake is a western dish but now gaining popularity because of variants available in this delight. Whether made with egg or egg less sweet pancakes can set your mood for entire day. 

The most common variants are Banana Pancakes, Chocolate Pancakes and Apple pancakes but have you ever thought about Sweet Potato Pancakes? Yes, pancakes from sweet potato. Seems interesting, so it is.

 These Pancakes are made with the goodness of sweet potato and for the sure you are going to fall in love with it. Here’s the recipe. 

INGREDIENTS 

1 cup – Sweet potato, boiled and mashed

¾ cup – All purpose flour

2 tsp. baking powder

1½ cup – Milk

½ tsp – Vanilla essence or cardamom powder

5g – Butter

DIRECTIONS TO COOK

Take all purpose flour, baking powder, sugar as per taste and a pinch of salt together and mix them well.

In a bowl, whisk rest  the ingredients till smooth and thick (add the milk gradually so that it is not too runny)

Lightly grease a non-stick pan with one teaspoon butter, put a spoonful of batter in the warm pan, and cook for a few minutes on each side till brown.

Serve the pancake with honey or maple syrup for sweetness. For a nutty taste, serve it with cashew or peanut butter.
