Beetroot and Coconut Soup: Savoury full of taste and nutrition

Here’s the list of ingredients and directions to cook 

(Serves 2)

INGREDIENTS 

Beetroot – 2(Approx. 150 gm.)

Onion -1 small

Ginger  - 1 tablespoon finely chopped 

Green chili -1

Salt and pepper – as per taste 

Coconut oil – 2 tablespoon

Coconut milk – 100 ml

Coconut cream – 2 tablespoon

DIRECTIONS TO COOK 

Peel and roughly chop the beetroot, onion , chili and ginger

Heat coconut oil in a pan and add roughly chopped onions, chilies, ginger and beetroot and sauté it.

Add water accordingly and bring it to a boil, let it simmer for an hour.

After this puree the contents in a blender and put it back on the flame.

Add coconut milk, add some salt and pepper in the puree and heat it for few minutes.

Your Beetroot and coconut soup is ready. Serve piping hot and finish it with coconut cream.
